Israeli Soul
DON MORRIS JOINED James Beard Award-winning Chefs Michael Solomonov and Steven Cook, renowned editor Dorothy Kalins, and intrepid photographer Michael Persico on a whirlwind trip to Israel to seek out the country’s most iconic dishes. Shooting (and eating) from early morning until after midnight, it was a fascinating tour of crisscrossing cultures and cuisines as seen through the eyes of two of America’s most talented chefs.
Our dedicated team then began perfecting recipes for the home kitchen. This cookbook is an empowering guide to making dishes passed from generation to generation, and an insider travelogue to some of the best restaurants and roadside stands in Israel.
You can enjoy this wonderfully diverse food at Mike and Steve’s restaurants in Philadelphia inspired by the places we visited: Abe Fisher, Dizengoff, Goldie, K’Far, Laser Wolf, and Merkaz.
